In our part of Spain they call this ‘carne de la olla’ (literally ‘meat in the pot’). It’s a traditional method of storing meat that originates from before the days of refrigerators. Basically, the meat (usually chorizo, lomo (pork loin) and costillas (ribs)) is prepared and put into a large container (a jar or tub) which is filled with lard (manteca). When you want to eat it, you just take out the meat you want and reheat it in a pan. Obviously, the flavour is amazing. I know that some companies make this commercially so I’ll have a look around and see if we can get some to the UK.

Help !!! I’m getting withdrawal symptoms since I ran out of Manteca Colora (chorizo en manteca,or chicharrones en manteca,or just manteca (red).
It comes in tins so it’s long lasting……………………..and I’m desperate nfor some !
